Nutritious salmon and vegetables roasted together with lemon and fresh herbs for an easy, flavorful meal.

# What You’ll Need:

→ Fish & Protein

01 - 4 salmon fillets (6 oz each), skin-on or skinless

→ Vegetables

02 - 1 lb baby potatoes, halved
03 - 12 oz fresh green beans, trimmed

→ Marinade & Seasoning

04 - 3 tbsp olive oil
05 - 2 tbsp fresh lemon juice
06 - 2 tsp Dijon mustard
07 - 2 garlic cloves, minced
08 - 1 tsp dried oregano
09 - 1 tsp dried thyme
10 - 1/2 tsp salt, plus more to taste
11 - 1/2 tsp freshly ground black pepper

→ Garnish

12 - 1 lemon, sliced into rounds
13 - 2 tbsp chopped fresh parsley

# How To Make It:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil for easy cleanup.
02 - In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, oregano, thyme, salt, and pepper until well combined.
03 - Add halved potatoes to the bowl and toss to coat evenly with marinade. Spread potatoes onto the sheet pan in a single layer and roast for 12 minutes.
04 - While potatoes are roasting, add green beans to the bowl with any remaining marinade and toss to coat thoroughly.
05 - After 12 minutes, remove sheet pan from oven. Push potatoes to one side and add green beans and salmon fillets to the pan. Brush salmon with any leftover marinade and top with lemon slices if desired.
06 - Return pan to oven and roast for 13-15 minutes until salmon reaches internal temperature of 145°F, potatoes are tender, and green beans are crisp-tender.
07 - Remove from oven and garnish with chopped fresh parsley before serving.

# Best Practices:

01 -
  • One pan means one pan to wash—a detail that matters more than you'd think on tired evenings.
  • The salmon stays buttery and tender while the potatoes caramelize and the green beans develop this subtle char that nobody expects to be so good.
  • It's naturally clean eating without tasting like deprivation, which is honestly the dream scenario.
02 -
  • Roasting potatoes and salmon together is only possible because of timing—the potatoes absolutely must get that 12-minute head start, or you'll end up with raw potatoes and overcooked fish.
  • Salmon cooks faster than you expect, and checking it by watching for opaqueness is more reliable than guessing by time alone, especially if your oven runs hot or cool.
03 -
  • Don't crowd your sheet pan—everything needs space to roast rather than steam, so use two pans if your potatoes are piled up.
  • Fresh lemon juice is non-negotiable in this recipe; it's the brightness that prevents everything from tasting heavy or one-dimensional.
