03 - 2 tablespoons mayonnaise (for dressing)
04 - 2 tablespoons crumbled feta cheese (optional, for dressing)

→ Vegetables & Herbs

05 - 1 ripe avocado, sliced
06 - 1 small cucumber, julienned
07 - 1 cup baby spinach leaves
08 - 1/2 cup fresh parsley leaves (for dressing)
09 - 1/4 cup fresh chives (for dressing)
10 - 2 tablespoons fresh tarragon or basil (for dressing)
11 - 2 tablespoons chopped green onion (for dressing)
12 - 1 small garlic clove (for dressing)
13 - 1 tablespoon fresh lemon juice (for dressing)

→ Pantry

14 - 4 large whole wheat tortillas or spinach wraps
15 - Salt and freshly ground black pepper, to taste
16 - 1 tablespoon olive oil (optional, for dressing)

# How To Make It:

01 - In a blender or food processor, combine Greek yogurt, mayonnaise, feta cheese if using, parsley, chives, tarragon or basil, green onion, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and vibrant green. Taste and adjust seasoning as needed.
02 - Briefly warm the tortillas in a dry skillet or microwave until pliable and easy to roll.
03 - Lay each tortilla flat and spread a generous spoonful of green goddess dressing down the center.
04 - Layer baby spinach, sliced chicken, avocado, cucumber, and any extra herbs along the dressing. Drizzle another small spoonful of dressing on top.
05 - Fold the sides of the tortilla inward and roll tightly to enclose the fillings. Repeat with remaining tortillas and ingredients.
06 - Slice each wrap in half and serve immediately, or wrap tightly in parchment and refrigerate up to 24 hours.

# Best Practices:

01 -
  • It tastes like restaurant quality but takes about the same time as a sandwich.
  • The dressing is so addictive you'll want to make extra just to keep in the fridge.
  • It's the kind of meal that feels indulgent but your body actually thanks you for eating.
02 -
  • Don't blend your dressing too far ahead—it can separate slightly and the color dulls a bit, so make it while you're assembling everything.
  • If your avocado is hard, you'll hate this wrap, so take the time to pick a ripe one or let it sit a day if you need to.
03 -
  • Make a big batch of dressing and keep it for three days—it tastes good on grain bowls, roasted vegetables, and grilled fish too.
  • If you forget to warm your tortillas and they crack, microwave them for 10 seconds between damp paper towels and they'll come right back to life.
